Definitive is an understatement of a place. Dark tap room, a huge patio out front, old leather sofas inside. We took the sofas every time. They were our spot.
The beer is extraordinary. A long list, and every pour on it earns its place. You come for one beer and you stay for the twelve you did not plan on. We first drank Definitive in 2019 and the standard has held: state of the art then, state of the art now.
The sours are the revelation. Tropical Brilliance explains what a sour can be: pineapple, coconut, banana, vanilla underneath, lactose rounding it off. There was a strawberry one too. The IPAs hold the line, Particles and the Definitive IPA among them. Vanilla Superdome was the best thing we drank, a milkshake double that drinks like dessert and somehow still wants finishing. Then Robin closed it out, a twelve percent imperial stout built on graham cracker, coconut, walnut, vanilla, and cacao.
We opened a tab and they took our card. We would have left a kidney as deposit to keep drinking what they make.
Dogs are plenty and welcome front and back. The front sits among the trees, off the street. The back patio borders a parking lot, tucked away enough to feel sealed off, room enough for a private event. A food truck out front, though the options run thin.
And we did return many times. Definitive is the high mark of the trip. We returned many times, and we will return many more.
