Peders. Drinking Underground in Copenhagen's Old Quarter

The entrance to Peder's Craft Beer Bar is easy to miss, a modest doorway in the historic quarter with steep steps leading down into a vaulted cellar.

Small windows sit high along the ceiling, letting in just enough daylight to soften the room, and the low light makes the whole space feel intimate.

The bar stands on the opposite side from the seating, a layout that keeps the room personal. Arriving mid-afternoon in the middle of summer, around three, we had the cellar to ourselves; within the hour, people began drifting in and the tables filled.

The tap list is well curated, including European, Canadian, and US craft beers, as well as several of Peder's own collaborations that deserve a pour.

It rewards the walk into this old part of the city.
